I love soy milk. Growing up in Hong Kong, my Mom used to drag me along to the traditional market to buy grocery before dinner, and sometimes we would pass by the tofu shop, where you buy fresh soft tofu by “scoop” out of a giant wooden bucket. We would sit at one of the few tables and each order a glass of soy milk, a plate of fried tofu with meat to share, and maybe a bowl of sweet tofu dessert if we were hungry.
When I moved to the bay area 20+ years ago, there weren’t that many restaurants that sell soy milk, and even if they do, it was usually only offered on the weekend. And the Silk brand soy milk? They should not even be considered soy milk!
I never knew how easy it is to make soy milk until my Mom taught me. Here’s how:
- Cheesecloth made into a bag
- Large boiling pot
- Soak 1 cup of dry soy beans in water for 8-24 hours. Change water once halfway through. The 1 cup of dry soy beans will become approximately 3 cups of soy beans after soaking.
- Drain water.
- For every 1 cup of soaked soy beans, add 2 cups of water in the blender. Blend well.
- Pour mixture in cheesecloth bag and squeeze out soy milk into a large boiling pot.
- Pour grounded soy beans back into the blender and mix with 1 1/2 cups of water for every 1 cup of soaked soy beans, Blend well.
- Pour mixture in cheesecloth bag and squeeze out soy milk into boiling pot.
- Discard grounded soy beans.
- Boiled soy milk on medium heat. Stir often. DO NOT LET IT BURN!
- Once boiled, cook for another 3 minutes. Stirring constantly.
- Remove from stove. Add 1/4 to 1/2 cups of sugar. Soy milk will taste sweeter when it’s hot so adjust sugar level accordingly.
- Basically each cup of soy bean will be blended twice, with the second time slightly less water.
- Soy milk is toxic if not fully cooked so make sure it boils.
- Don’t let it burn, or else the whole pot will taste burnt.
- Depending on the brand of soy beans you get, the consistency will be different, so remember to adjust water the next time.
For this batch, my 1 cup of dry soy beans yields approximately 10 cups of soy milk. There is nothing better than enjoying a cup of warm homemade soy milk in the morning!
